Ayam Bumbu Lengkuas / Chicken with Galangal

INGREDIENTS s
800 grams (1 whole) chicken cut into 8-10 pieces
10 tablespoons galangal, grated
4 pc Salam Leaves /Indonesian bay leaves
4 pcs lemon grass stalks, crushed
1 tablespoons tamarind juice
cooking oil little bit

GROUND SPICES:
8 pcs shallots
4 pcs garlic cloves
5 pcs candlenuts, lightly toasted
1 tbs tamarind juice
2 teaspoons turmeric / tumeric powder is ok
1 – 2 teaspoons salt
2 tablespoon sugar

METHOD:
Marinade the chicken with the spice paste and grated galangal. Rub the chicken well so that they absorb the spice flavor.

Place the chicken in a wok, adding Indonesian bay leaves, little bit water and crushed lemon grass.

Cook over low heat until the chicken is half cooked.

Continued cooking until all the water is absorbed. Remove the chicken.

Fried this remaining seasoning for serving later.

Deep fry the chicken pieces until the chicken become brownish. Drain and remove. Serve it with the fried remaining seasoning on top of it.
