Terong Balado / Aubergine Balado

Ingredients:

2 or 3 aubergine, slice

Sauted Ingredients :
10 or more chilies, thinly slices
1 tomato, cut cube
4 onions , sliced
3 cloves garlic, sliced
5 cm Galangal
1 stalk lemongrass, sliced thinly only the white color
2 tbsp salt
3 tbsp sugar

Method:

Cut aubergine into medium size. Fry until it is brownish. set aside

Add little bit oil, sauteed onion, garlic, tomato, chilies,lemon grass, galangal Blend it slowly, add little bit oil if too dry. Put aside.

Place the Aubergine in plate and pour on top with spice that has been sauteed before.

Ready to be served with rice
